Hawaii 5-OOOH! One Tasty Tropical Drink

 

A Hawaiian getaway sounds like perfection, but we all don’t have the luxury of being jetted across the Atlantic on a whim to the land of leis, grass skirts and scintillating surf. With the help of my hubby, who happened to bartend at a beach club during his college days, we came up with a deliciously fizzy, refreshing, all-natural (and not-too-sweet) drink* that we call the Hawaii 5-OH! Hawaii because of the island flavor of the coconut milk and fresh pineapple; 5 because of its five simple and sensational ingredients; and Oh because, well, it’s Oh, so tasty!

*This recipe works equally well with or without alcohol. A note to allergy sufferers: alcohol is a high-histamine substance, so it’s best to limit or avoid altogether (especially if you’re already symptomatic). That being said, if you want to imbibe, swap out the sparkling water for some champagne/sparkling wine (a Hawaiian-inspired take on the mimosa).

Instructions
  1. With a powerful blender, pulverize pineapple chunks and add coconut milk and lime juice. Mix until smooth and thoroughly combined.
  2. If coating the glass rim, blend together 1:1 ratio of coconut sugar and fresh lime juice; dip glass rim in mixture to lightly coat.
  3. Pour the blended drink mixture into glasses to between ½ and ¾ full, then top with chilled sparkling water or champagne/sparkling wine.
  4. Drizzle the cherry juice over the back of a chilled spoon and into the glass.
  5. Stir gently with a swizzle stick (don’t overmix), creating a streaked, sunset-like effect in the glass.
  6. Garnish with a couple fresh sprigs of mint (I crush mine gently with a muddler to unleash the fragrance), and slip a lime and pineapple wedge over the rim. Aloha!
